Cooking Class in Kutaisi
At the designated time, we'll meet at14 Kaukhchishvili str. After greeting each other, we'll step into a typical family home in Kutaisi and dive into the authentic culinary tradition of Georgia.
We'll put on our aprons to learn how to make the famous khinkali. Let's get to it! First, we'll prepare the dough made of wheat, water, and salt. We'll discover how to knead the gluten network until it becomes the correct texture to wrap the stuffing without breaking when it boils.
Then, we'll make the traditional stuffing mixing minced meat with chopped onion, pepper, and aromatic herbs, like cilantro. We'll add cold water or broth to make a juicy emulsion that will transform into the characteristic broth inside a khinkali as it cooks.
Afterward, we'll learn the accordion-style pleating technique that shapes its distinctive crown. This way, we'll seal each piece by hand-twisting it to make sure it's closed. As our khinkali boil, we'll take part in a tasting of 4 wines and Georgian vodka. Did you know that wines here are fermented in qvevri, underground clay amphoras?
Lastly, the most awaited moment will arrive as we sit at the table to taste our khinkali creation. You deserve it!
We'll wrap up this cooking class experience after 2 hours.
